Rum Runner

from The Craft of the Cocktail

  • 1 piece of Lime
  • 1 ounce Light Rum
  • 1 ounce Gold Rum
  • 2 ounces Pineapple Juice
  • .5 ounce Lime Juice
  • 1 ounce Simple Syrup
  • 1 small Egg White
  • dash Peychaud's Bitters
  • dash Angostura Bitters
  • Tropical Fruit (Garnish)

Bruise the lime in the bottom of the mixing glass, add the remaining ingredients, and shake well with ice. Serve over ice in a tall or collins glass. Garnish with tropical fruits.
