Horse's Neck

from The Craft of the Cocktail

  • 1.5 ounces Bourbon Whiskey
  • 5 ounces Ginger Ale
  • spiral Lemon Peel

Before icing a highball or collins glass, place the lemon-peel spiral in the glass, spiraling up from the bottom with the curled end of the spiral hanging over the rim of the glass. The piece hanging over the edge of the glass should look like a stylized horse's neck and head. Put the ice down through the center of the spiral and then build the drink.

This drink takes its name from the distinctive garnish that resembles a horse's head and neck peeking over the rim of the glass.
