Green Deacon

  • St. George Absinthe
  • 1.5 oz. Plymouth Gin
  • 1 oz. Grapefruit Juice
  • .75 oz. Plymouth Sloe Gin

Shake with ice and strain into a chilled, St. George Absinthe-rinsed coupe. No garnish.

This drink is based on the Rosy Deacon recipe in Jones's Complete Bar Guide. One night, I served it to my friend J. C. Iglesias, who suggested adding Absinthe. —Jim Meehan, Fall 2008
