El Burro

  • 1.5 oz. Siembra Azul Reposado Tequila
  • 1 oz. House Ginger Beer
  • .75 oz. Lime Juice
  • .75 oz. Pineapple Juice
  • .5 oz. Simple Syrup
  • .25 oz. Vieux Pontarlier Absinthe

Shake with ice and strain into a chilled Collins glass filled with ice. Garnish with a lime wheel and a piece of candied ginger.
