  • Vieux Pontarlier Absinthe
  • 2 ounces Anchor Genevieve Gin
  • .25 ounce Rich Demerara Syrup
  • 3 dashes House Peychaud's Bitters
  • Lemon Peel (Garnish)

Rinse a rocks glass with absinthe and dump. Stir the remaining ingredients over ice, then strain into the glass over 1 large ice cube. Garnish with the lemon twist.
